WALNUT RAISIN RICE CAKE
A version recipe of mine based from a mistake, but it turned out so good!
The mistake was that I confused the package of rice flour, to glutinous rice flour! 🤣 My supposedly, dried fruit and nuts rice bread turned into an Asian rice cake which happened to be something similar to the popular traditional treat called Yongyang Chaltteok 🤯! What a splendid happy accident this is!
I made this using an oven (cause I thought I was making bread!), but the Korean way is to steam this treat. Do whatever you think is more convenient for you 😉.
This recipe is gluten free, and perfect for Keto and Type O diet.
Tools needed:
* if for oven: 3x5" loaf pan
* if for steamer large plate, or bowl than can fit your steamer
* baking paper

Cooking Instructions

Combine all "dry ingredients: on a bowl, mix well.

Add water portion by portion, but observe consistency. It has to have the right goey consistency like a gruel, not tacky, and not watery. That said, adjust your water accordingly

Add in dried friuts and nuts and combine well with batter. On picture, you can see that my sunflower seeds were used just as garnish, but I think its best mixed in batter so I recommend it here.

Pre heat oven or steamer. While that's in the works, line your 3x5" loaf pan with baking paper.

Pour batter unto lined loaf pan. Tap the bottom to remove air out.

Bake for 35min in 150°C, // OR steam but make sure to wrap towel on the inner lid to avoid steamer's sweat drops unto the rice cake.

Pohulpohul Cake or Itak Pohulpohul is a traditional Batak snack, which comes from Tapanuli. Shaped like a fist knuckles, similar to Itak Gurgur because the shape is made with quite simple tools --- namely the fingers of your fist, which is why it is called "pohulpohul" (which means 'fist').There is little difference between Pohulpohul and Gurgur, among others : Pohulpohul only uses flour, unlike Gurgur which is mixed with grated coconut. Pohulpohul is steamed before serving, but Gurgur can be directly eaten after it is created.
