Ingredients

45 mins
2 servings
  • 2chicken breasts cut into chunks or 4-5 thighs,
  • 1/2 headcauliflower cut into chunky florets,
  • 1onion, cut into chunks,
  • 1generous drizzle walnut oil (olive oil as alternative),
  • 2 tspcurry powder, (I used hot),
  • 1 tsptumeric,
  • 1 tspgarlic granules,
  • Red chilli flakes to taste,
  • 1/4 tspground cumin,
  • Salt and pepper to season
  • To garnish:
  • Mango chutney

Steps

  1. 1

    Preheat your oven to 180 degrees. Line a tray with foil and lay out the chicken pieces, cauliflower and onion pieces. Drizzle over the oil.

  2. 2

    Sprinkle over the spices and season well with salt and pepper. Toss everything around in the seasonings and oil to coat. Then rearrange out flat.

  3. 3

    Bake in the oven for 25-35 minutes until the chicken is cooked through and the juices are running out clear. Serve up and dollop over some mango chutney. Enjoy! :)
