This spicy and scrumptious mutton gravy is famous in North India, especially Punjab. This recipe helps you cook same restaurant style curry at home. It is quite easy recipe like any other spicy mutton preparation , with a few twists in method steps and a lots of spices in list. Dhaba style cooking uses whole spices which are added freshly ground or pasted, enhancing the taste and aroma of curry. In this particular Dhaba Mutton Curry Recipe , mutton or lamb cuts are slow cooked with spices and a sauce of tomato and onions. Mutton pieces are marinated with spices, salt and yoghurt and kept aside for around half to one hour. Better keep it aside for an hour. Ingredients

45 minutes
5-6 servings
  • 1 kgMutton Bone-in
  • 2-3 tspGinger garlic paste
  • 2 tspSalt or to taste
  • 1/2 tspTurmeric powder
  • 1 tspCumin powder
  • 1 tspGaram Masala
  • 1 tbspKashmiri Red Chilli powder
  • 1 tspPaprika
  • 1 tspCoriander powder
  • 1 cupYoghurt
  • 1 cupTomato puree
  • 2Onions thinly sliced
  • 2-3Green Chillies chopped
  • 1small bunch Coriander Leaves finely chopped
  • 2Red Chillies dry ones
  • 1/2 tspCumin Seeds
  • 1/4 cupOil
  • WHOLE SPICES -
  • 2Cardamoms
  • 2Bay Leaves
  • 2Cinnamon sticks small
  • 4-5Cloves

Steps

45 minutes
  1. 1

    Marinate the mutton pieces with kashmiri red chilli powder, paprika powder, half of ginger garlic paste, cumin powder, salt and yoghurt. Set aside for an hour.

    In a big pan, add half of oil and fry the mutton pieces for 10 minutes. Keep aside. In another pan, add rest of oil, temper cumin seeds along with whole spices - cardamoms, cloves, cinnamon stick, bay leaves and dried red chillies.

    Add onions and green chillies and saute till the onions turn a golden brown in colour. Add the other half of the ginger garlic paste and saute for a minute.

    Add coriander powder, turmeric powder and saute till oil oozes out. Add tomato puree, mutton pieces and garam masala. Mix well, add 2 cups of water and bring to a boil.

    Cover and cook on a medium low heat for about 40-45 minutes. Adjust to a semi thick consistency. Serve it piping hot.
