1 packagepearl couscous
1 packageMoroccan tofu
1red pepper
1/2small eggplant
2 handfulsgrape tomatoes
1/3 cuponion
1/3 cupcorn
1/2 cupbroccoli
Dozenpitted kalamata olives
Salt
Pepper
Olive oil
Garlic powder
Bay seasoning

Preheat oven to 425

Chop up all veggies and mix together with oil, salt, pepper, garlic powder and bay seasoning

Cook for 25-30 min while tossing 1-2 times

Cook tofu and couscous according to packaging

Mix all together
