Watermelon gin cocktail

The recipe online called for a shaker and muddling but I just wanted to use my new blender. I love gin and any excuse to make a nice cocktail. Other than the sugar explosion when I was trying to take the lid off to prepare the simple syrup, this was easy!

The recipe online called for a shaker and muddling but I just wanted to use my new blender. I love gin and any excuse to make a nice cocktail. Other than the sugar explosion when I was trying to take the lid off to prepare the simple syrup, this was easy!

Make Ahead: Prepare the simple syrup by heating equal parts water and sugar on medium until dissolved, about 3 minutes. Set aside to cool.

Cut the watermelon into 1 1/2-inch chunks. (I used a smaller melon and about a quarter of the melon was used)

Place the watermelon, basil and salt in a blender. Blend until soupy.

Add the gin, lime juice and simple syrup. Fill with 1/2 cup ice, place the lid back on blender blend well. Garnish and serve.
