Bad Day Salvage Pasta Sauce

Suffice it to say that, if it hadn’t defrosted after the freezer door had inadvertently been left open, then it’d gone off in the heat anyhow! And going to the shops was impossible. Plus, we’d been running stocks down prior to a big delivery. But T beckoned so this is what I rustled up and we enjoyed.

So this sauce was made from what I could salvage. I couldn’t add to the ingredients coz I didn’t have any more. #mycookbook

Ingredients

40-50 minutes including prep
4 servings
  • Olive or other oil
  • 250 gunsmoked bacon
  • 4shallots, chopped
  • 3 clovesgarlic, chopped
  • 3 stickscelery, chopped
  • 1/2yellow pepper, chopped
  • 250 gcherry tomatoes, quartered
  • 1 (400 g)tin chopped tomatoes
  • 250 mldry white wine (I used moderately-sweet Austrian Grüner Veltliner coz twas already open)
  • 1 tspsugar
  • Salt (I usually use Sea Salt)
  • 1 tspdried thyme
  • 1 tspdried rosemary
  • 1 tbspdried oregano
  • 2 tbsppaprika
  • 1 tspsmoked paprika
  • 1/2 tspcayenne pepper
  • Pasta of your choice
  • to tasteParmesan cheese

Steps

40-50 minutes including prep

    Fry the bacon in oil, set aside on kitchen paper and cut Into small pieces.

  2. 2

    Heat more oil and fry the shallots for 3 minutes, stirring only to avoid sticking.

  3. 3

    Add the garlic, fry for another minute and the add the pepper and celery and fry on a medium- high heat for a further 5 minutes, stirring occasionally.

  4. 4

    Stir in both types of tomato and increase the heat. Add the wine and bring to the boil, stirring gently but frequently.

  5. 5

    Stir in the herbs and spices (not too much salt) and add the sugar.

  6. 6

    Add back the bacon. Stir thoroughly but gently and cook on a fast simmer for 20 minutes.

  7. 7

    Serve with the pasta of your choice and garnish with Parmesan cheese to taste.
