Ingredients

2 hrs (Prep to Dish)
10-12 people
  1. 1 Cupmaida / all-purpose flour
  2. 1/2 CupWheat Flour
  3. 2/3 CupSemolina (Sooji)
  4. 1/2 CupCoconut Flour or Freshly Grated
  5. 1/2 CupGround/Caster Sugar
  6. 1/4 CupHoney
  7. 1/4 tspBaking Powder
  8. 1/8 tspBaking Soda
  9. 1Banana (Full Ripe)
  10. 1 tbspFennel Seeds (Saunf)
  11. 1 tspFreshy Crushed Black Peppercorns
  12. 1 tspDesi Ghee (For the Batter)
  13. 1 tspCardamom Powder
  14. 250 gmRefined Oil (For Frying)
  15. 150 gmDesi Ghee (For Frying)
  16. For the Sugar Syrup
  17. 2 cupsugar
  18. 1 cupwater

Steps

2 hrs (Prep to Dish)
  1. 1

    Make a smooth batter out of all the ingredients mentioned above except the oil and ghee for the frying purpose

  2. 2

    Allow it to sit/rest for at least 1-2 hrs time, more is good as it gives sufficient room for the sooji to inflate well enough

  3. 3

    Then take the measured amounts of both refined oil and ghee for the deep frying purpose- In a wide mouthed, heavy & deep wok/frying pan/kadhai

  4. 4

    Heat the oil well first & then reduce the flame from high to low-medium, all through the entire frying tenure

  5. 5

    Take a medium sized round deep ladle & each time, pour in a ladle full of the batter into the middle of the frying pan and allow it to first come up & float onto the surface of the oil

  6. 6

    Then, flip onto it's other side- pour in another one ☝🏻 in the similar manner & in the same way, each time- you can fry at least 3 Malpuas, altogether

  7. 7

    Finally, once well fried in brown colours in both the sides, take out of the oil on a plate with kitchen towel to drain out it's excess oil & then, immediately transfer them, to the already prepared & warm sugar syrup

  8. 8

    Our MALPUAS are ready to be served to the LORD 💁🏻‍♀️🙏🏻
