My nephew love chocolate muffins. I have few recipes saved in my phone - all with different ingredients measurement. So I tried each recipe, and experimented few times until I got this perfect, dense and super chocolatey chocolate chip muffin.

Ingredients

8-10 large muffin cups
  1. Dry ingredients
  2. 1 1/2 cupsall-purpose flour
  3. 1/2 teaspoonbaking powder
  4. 1 teaspoonbaking soda
  5. 6 tablespoonskimmed milk powder (replaceable with any kind of milk powder)
  6. 3 tablespoonchocolate malt powder (e.g. Milo powder)
  7. 4 tablespoonchocolate powder
  8. 1 pinchsalt
  9. Wet ingredients
  10. 2medium eggs
  11. 1 teaspoonvanilla essence
  12. 3/4 cupfresh milk
  13. 3/4 cupbrown sugar
  14. 10 tablespoonmelted butter (replaceable with vegetable oil)
  15. Add-ons
  16. 1/2dark chocolate chips
  17. Crushed nuts (peanuts/hazelnut/walnut)

Cooking Instructions

    Preheat the oven to 180°C.

    Sift all dry ingredients together into a clean, dry bowl.

  3. 3

    In another bowl, whisk eggs gently, just to incorporate the yolk and the white. Add vanilla essence to the egg mixture.

    Add the rest of the dry ingredients into egg mixture, whisk to combine. Careful not to overbeat.

    Finally, add the sifted dry ingredients into the liquid mixture in few batches - mix with spatula just to combine the ingredients together. Make sure not to overmix or the muffin might turn into cupcakes :)

    Pour the mixture into desired muffin cups, filling up to 3/4 of the cups. Sprinkle the crushed nuts and chocolate chips as many as you want.

    Bake for 25 to 30 minutes, or until toothpick come out with some crumbly bits attached to it.
