Beef Potato Pottage

The first time I tried this recipe was 2016 for a catering practical class. I had potatoes and didn't feel like eating it boiled, roasted or fried. Then I remembered this recipe.....the sweetness of chewing mashed spiced potatoes and beef together is a vibe on another level!

The first time I tried this recipe was 2016 for a catering practical class. I had potatoes and didn't feel like eating it boiled, roasted or fried. Then I remembered this recipe.....the sweetness of chewing mashed spiced potatoes and beef together is a vibe on another level!

For Meat Stock: Wash meat properly and put in a pot, add salt, seasoning, spice mix, onions. Boil on medium heat till meat is tender. Separate the meat from the stock and set both aside

For Potato Pottage : Place a pot of palm oil on medium flame, allow it to hot, add onions, pepper, crayfish, spices and saute for 2-3 mins

Add water, teaspoon of salt and seasoning. Cover and leave to boil. Taste and adjust if necessary

Add the potatoes and make sure the water is enough to cover it. Cook for 10 minutes

Add the beef, stir well and leave to cook till potatoes are very soft

Add ugwu leaves, stir well and let it cook for 2 mins

Turn off the heat. Using a marsher or spatula, press the potatoes till everything is completely marshed to Pottage
