Cowpeas are rich in Proteins and essential amino acids.
Steps

Dry Roast Cowpeas for 2-3 minutes and pressure cook it for 3 whistles. We can also used overnight soaked Cowpeas.

In a mixing bowl add cooked Cowpeas, chopped onion, tomato, capsicum, grated carrot. Mix well.

In a small bowl add olive oil, pepper powder or chat Masala, lemon juice and mix well. Add this dressing to the salad
- 4
Mix everything very well. And serve immediately. Protein rich simple yet delicious on the go meal is ready.
