Ingredients

2 servings
  1. 1 cupCowpeas
  2. 1/2 cupgrated carrot
  3. 1/4 cupcapsicum
  4. 1/4 cupchopped onion
  5. 1/4 cupchopped tomato
  6. 2 tspchopped coriander leaves
  7. 1/2 tsproasted flaxseeds
  8. 1/2 tsplemon juice
  9. 1 tsp black pepper powder / chat masala
  10. 1/2 tspolive oil/ sesame oil

Steps

10 minutes
  1. 1

    Dry Roast Cowpeas for 2-3 minutes and pressure cook it for 3 whistles. We can also used overnight soaked Cowpeas.

  2. 2

    In a mixing bowl add cooked Cowpeas, chopped onion, tomato, capsicum, grated carrot. Mix well.

    In a small bowl add olive oil, pepper powder or chat Masala, lemon juice and mix well. Add this dressing to the salad

  4. 4

    Mix everything very well. And serve immediately. Protein rich simple yet delicious on the go meal is ready.
