HARIYALA MOONG

Moong/ Green bean is a protein rich bean and also easy in digestion in comparison to other beans and pulses. Moong is consumed in Jain community very often, but they make it in a simple way due to religious reason.
This recipe contains lots of greens and it makes it more healthy and more delicious. Flavours and taste of fresh green make this moong a satisfying and soulful.
We can consume it with rice or any flat bread or even a bowlfull of this moong can be consumed as mini meal, breakfast. Even weight watchers can include this in their diet.

Ingredients

35 minutes
4 persons
  • 1 cupwhole green bean (moong)
  • 1/2 cupchopped spinach leaves
  • 1/2 cupchopped fenugreek leaves
  • 1/4 cupchopped coriander
  • 1/2 cupchopped green tomatoes
  • 2chopped onions
  • 2-4chopped spring onions
  • 2-4chopped fresh green garlic
  • 2-4chopped green chillies
  • 1 tbspchopped garlic
  • 1 tbspchopped ginger
  • 1 tspcumin seeds
  • 1 tspcoriander powder
  • 1/2 tspturmeric powder
  • 1/2 tspgaram masala
  • 1/4 tspasafoetida
  • 1 tbspghee
  • to tasteSalt
  • 1/2 cupwater

Steps

35 minutes
  1. 1

    Wash and pressure cook green beans.

    Heat ghee in a pan, add cumin seeds and asafoetida. Then add garlic and saute for few seconds further add ginger and saute for a few seconds.

    Add onions and saute till it becomes transperant and soft. Add green chillies when onions are cooked halfway.

    Add green tomatoes and cook for 2-3 minutes. Then add spinach and fenugreek leaves and mix well, cover and cook for 2-3 minutes.

    Add pressure cooked green beans, also add spring onions,green garlic and coriander.

    Add all the spices and salt,mix well. Add about half cup water, cover and cook for 2-3 minutes.

    Turn off the heat and serve hot with rice or any flat bread.
