Steps
- 1
Gather all the ingredients.
- 2
Use a round baking pan, 9.5 inches (24 cm) in diameter and 2.5 inches (6 cm) high.
- 3
Preheat the oven to 375°F (190°C), top and bottom heat.
- 4
Peel the apples and cut them into small pieces.
- 5
In a saucepan, add the butter, brown sugar, 1/2 teaspoon ground cinnamon, and the juice of 1/2 lemon. Stir everything together well.
- 6
Cook the apples over medium heat until they are soft. Set aside.
- 7
In a bowl, combine the ricotta cheese and powdered sugar. Mix well.
- 8
Add the caramelized apples and mix everything together thoroughly. Your filling is now ready. Set aside.
- 9
Roll out one sheet of puff pastry and place it in the pan with its parchment paper. Prick the base and sides of the pastry with a fork.
- 10
Break the cookies into pieces and spread them evenly over the base of the pastry.
- 11
Spoon the ricotta and apple cream over the cookies, spreading and leveling the mixture evenly.
- 12
Cut a circle from the second sheet of puff pastry to match the size of the pan. Place it over the ricotta mixture and fold the edges of the pastry over the tart.
- 13
Seal the edges well with a fork and prick the entire surface of the pastry.
- 14
In a bowl, beat the egg with the milk. Brush the entire surface of the tart with the mixture.
- 15
Brush generously.
- 16
Bake for 30 minutes. This is how it should look when done.
- 17
Remove from the oven and let cool completely at room temperature. Remove from the pan.
- 18
Place on a wire rack until fully cooled.
- 19
Dust with powdered sugar to decorate.
- 20
Cut a slice.
