Panamanian-Style Chicken, Jude’s Vermicelli Rice, and Tomato Salad

Cook over medium heat until the chicken releases its own juices. If it doesn’t release much, add a little water, cover, and cook until fully done.

For the Chicken: Chop and mix all the ingredients together.

Stir until most of the liquid has evaporated and the chicken is ready to eat. ☺

For the Rice: Place the vermicelli noodles in the pot where you’ll cook the rice. Stir until golden brown.

Add 6 cups of water, dissolve the bouillon if using, add salt and oil, and wait for it to boil. Then add the 3 cups of rice.

Let the rice absorb the water, then stir, reduce the heat, and cover. Once the rice is dry, stir again. The rice is ready to serve. ☺

For the Salad: Place everything in a glass or plastic bowl. Chop the tomatoes, then finely chop the onion. Add salt to taste, squeeze in the lime, and add the olive oil.

Mix everything together and it’s ready for the table! ☺
