Ingredients

30 servings
  • 10 kg-goats meat (mutton) cut mixed pieces (head,belly,legs and all organs)
  • 800gm-red onion slice
  • 1.5kg-tomatoes chopped
  • 150g-ginger chopped
  • 150g-garlic Chopped
  • 300g-green chilies chopped
  • 100g-red chili powder
  • 150g-turmeric powder
  • 200g- ground on grounded stone cumin paste
  • 200g-ground ginger&garlic paste
  • 200g-coriander leaves chopped
  • 100g-spring onion long strip cut
  • 100g-garlic leaves long strip cut
  • 100g-12spices or garam masala mixed powder(nutmeg,mace,green gardamom,long cardamom,cinnamon stick,bay leaf,black pepper,clove,coriander seed,cumin seed,star anise and dried ginger)
  • 1litre-mustard oil
  • 12Litre-water
  • Taste for salt,pepper powder

    Make heat cooking pot and pour mustard oil.

  2. 2

    Once oil medium well hot add garlic and ginger chopped stir couple of minute then add red onion slice and cook till turn light brown then add strip cut spring onion and garlic leaves.

    Add cut pieces goat's meat (mutton) then turmeric powder stirring mixed cook till 50%cooked meat.

  4. 4

    Add ginger garlic paste,salt,pepper,red chili powder,green chilies chopped,cumin paste,50% of 12 spices powder mixed all with stirring till spice's aroma cooked smell.

    Add tomato chopped all let it cooked well then add little water wait till well cooked.

    Strain 90% amount of cooked goat's meat and keep separate ready to serve.

    Add balance water,make hot then add balance 12spices powder,salt and pepper powder for taste and coriander leaves chopped.

    Once soup has boiled off the fire.ready to serve now.

    Jante bakhro ready (jante bakhroko jhol and chauta) mutton and mutton clear soup serve with white steamed rice.
