Mix the sugar, egg yolks, and vanilla together until the mixture is pale and creamy.

Add the milk to the mixture and cook over low heat, stirring constantly, until it thickens.

For the egg whites, beat them with a pinch of salt and 3 tablespoons (40 g) of sugar until stiff peaks form.

Bring a pot of water to a boil and gently drop spoonfuls of the whipped egg whites into the water. Poach for less than 1 minute.

For decoration, you can use caramel and chocolate sprinkles, or anything else you like.

To serve, pour the custard into bowls first, then add the poached egg whites, and finish with caramel on top.
