Homemade Tacos al Pastor

Place the cleaned chiles in boiling water. Once they are soft, transfer them to a blender.

Add the juice of the oranges, a splash of vinegar, a piece of onion, one clove, a pinch of allspice, a piece of cinnamon stick, and the achiote paste to the blender. Add a little of the chile soaking water. Blend until smooth.

Slice one onion into strips and add to the previously chopped pork. Pour in the blended marinade and mix until all the meat is well coated. Let it marinate for 2 hours.

Heat a little oil in a pot and add the marinated meat. Cover and cook for 20 minutes, then uncover to let the liquid evaporate.

Once the meat is cooked through and no longer juicy, turn off the heat. It's ready to serve.

Serve the tacos with chopped onion, chopped cilantro, your favorite salsa, pineapple, and lime.

I also served these with grilled spring onions. I cooked them in a skillet with oil, added soy seasoning sauce, and once they were well browned and cooked, I wrapped them in aluminum foil to steam and soften.
