Rice flour pancakes

This was a first for me and I was determined to enjoy my hard work. I actually made my own rice flour from scratch!!! Gotta say, it was totally worth the effort. Delicious pancakes they were😋😋

Steps

Make rice flour. (Or just buy some😉). Take 1 cup rice, rince thoroughly and soak. Soak for 3 hrs and drain the water

Take a kitchen towel and place on the counter. Spread the rice on the towel and leave at room temperature for 1 hr. (Do not dry in the sun)

The rice grain should have a moist feel. Put it in the blender(grinder works best) and blend well.

Sieve it to get your flour

Now back to the recipe. Take your egg, milk, oil, salt and sugar and whisk together

Add your rice flour and whisk. Cover the bowl and leave for 1 hr at room temperature(not a must to cover and wait)

Lightly oil your non-stick pan over medium heat. Drop batter by large spoonfuls and cook until bubbles appear on top and edges turn brown then turn

Cook all and place aside for plating

Roll and sprinkle sauce for presentation. Enjoy
