Ingredients

  1. 8-12chicken thighs
  2. 2 tbspkosher salt
  3. 2 tspfresh rosemary
  4. 2-3 leavessage
  5. 1/2 tspPepper
  6. 1/2onion
  7. 2 clovesgarlic

Cooking Instructions

  1. 1

    Mix all ingredients with enough warm water to cover chicken.

  2. 2

    Brine for 2 hrs

  3. 3

    Light 1/3 chimney of briquettes. Sear move to indirect heat. Set to 300-350 bake for one hour.
