Ingredients

  • 8-12chicken thighs
  • 2 tbspkosher salt
  • 2 tspfresh rosemary
  • 2-3 leavessage
  • 1/2 tspPepper
  • 1/2onion
  • 2 clovesgarlic

Steps

  1. 1

    Mix all ingredients with enough warm water to cover chicken.

  2. 2

    Brine for 2 hrs

  3. 3

    Light 1/3 chimney of briquettes. Sear move to indirect heat. Set to 300-350 bake for one hour.
