Stir-fried Iceberg Lettuce & Prawns with Garlic & Chilli

Do you cook Lettuce? The crunchy Lettuce such as Cos Lettuce and Iceberg Lettuce are great for cooking. I add it to my ‘Prawn & Egg Fried Rice’ and soups. This is a super easy stir-fry dish. The Iceberg Lettuce looks totally wilted, doesn’t it? But it retains crunchiness. Extra crunchy outer leaves are perfect for this dish.

Ingredients

2 Servings
  • 300-350 gIceberg Lettuce *5 to 6 large leaves
  • 1 tablespoonOlive Oil
  • 1 cloveGarlic *finely chopped
  • Fresh OR Dry Chilli as required *finely chopped
  • 150 gPrawns
  • 2-3 teaspoonsSoy Sauce
  • 1 teaspoonPotato Starch *mixed with 1 teaspoon Water

Steps

  1. 1

    300 to 350g Iceberg Lettuce might look a huge amount, but you need that amount. Wash and tear into 5-6cm pieces.

  2. 2

    Prepare all other ingredients ready to use. Cooking doesn’t take long at all.

  3. 3

    Heat Olive Oil, Garlic and Chilli in a wok or large frying pan over medium high heat. When aromatic, add Prawns. When Prawns are cooked, again it won’t take long, add Lettuce and stir-fry over high heat.

  4. 4

    Add Soy Sauce and stir, sprinkle with the Potato Starch mixture, stirring constantly. And that’s it. *Note: You can season simply with Salt & Black Pepper instead of Soy Sauce.
