Prepare the ingredients.

Over high heat, stir-fry the shallots and garlic until fragrant. Add the chilies and tomato. Stir until cooked.

Add the water spinach. Stir briefly until wilted, then add salt, sugar, sweet soy sauce, and oyster sauce. Stir quickly until the water spinach releases its juice. Add the broth powder. Adjust the seasoning. Turn off the heat.

Note: 1. Each type of water spinach is different. Choose medium-sized leaves as they are the most flavorful. Small leaves can be dry, and large ones can be watery.

2. During cooking, stay focused. Use high heat. The process is quick, under 10 minutes. This keeps the leaves green and the sauce thick without adding water. If it seems too dry, you can add a little water.
