In a saucepan add the berries and berry essence and sauté for 1 min until it puffs up. Set aside.

Melt the chocolate over a saucepan of barely simmering water making sure the surface of the water doesn’t touch the bowl.

Put the egg yolk, 2 tsp castor sugar and vanilla essence into a bowl and mix together and stir the chocolate.

In another bowl whisk the egg whites until stiff adding the remaining castor sugar slowly little at a time. Fold one quarter of the egg whites into the chocolate to loosen the mixture, then fold in the remaining white.

Melt the butter in a non-stick saucepan on medium heat and add the chocolate omelette into the pan so that it spreads evenly. Cook for 2-3 mins. Pre heat the grill. Place the saucepan into the grill for 1 min until the omelette is set.

Spoon the berry mixture on one side and fold the omelette. Dust with icing sugar and serve immediately.
