Finely chop the almonds with their skins. Beat the egg whites until stiff peaks form.

Combine the almond flour with the sugar and gently fold into the beaten egg whites. Add the almond extract. Mix everything together until you have a smooth dough.

Shape the dough into balls and roll them in granulated sugar. Place them on a baking sheet lined with parchment paper and decorate as desired. I decorated them with candied cherries (you can use other candied fruit), almonds, and chopped pistachios.

Bake at 320°F (160°C) for 15 minutes. The cookies should remain light in color.
