Tomato sauce not only serves as a base but as a saviour to lots of recipes,just not only enhancing the colour or aroma yet elevating flavours to great level.I always keep tomato sauce at my disposal so that whenever it's needed I can save some time & effort as well while getting flavourful dishes ready.fresh sauce is always very best but we can refrigerate or freezed it as well.with proper handling it's tastes & texture remains almost same.

  1. 500 gmTomatoes
  2. 1Onion
  3. 2-3Garlic cloves
  4. 1Ginger piece of 1/4 inch
  5. 1Bayleaf
  6. 1Starannise(badiyan ka phool)

    Wash tomatoes.peel onion ginger garlic.add in pot of water with bayleaf & staranise.water should be enough to submerge tomatoes

    Just boil tomatoes only till skin looses.take out from water, remove skin.

    Remove bayleaf & staranise.put all skinless tomatoes onion ginger garlic in blender & blend to fine paste.use some of the tomato water if needed

    Add this paste in a pot & let it cook at medium flame till it starts to boil,add some tomato water if sauce seems thicker. simmer for 3-5 minutes then turn off flame. When it cools down store in jar,box or container & use as needed

    I dont add salt or pepper in this sauce as seasoning depends on it's later use.can be added to make gravy/curry/soup/marinades.dont add used or dirty spoons in jars or container to avoid spoiling.
