Qorma or Korma originated from bawarchikhana of Mughal dynasty.hailing from Persia,Mughals added cooking techniques in Indian cusine,one of which is to marinate meat in yogurt with spices,cooked with onion & variety of spices+nuts+kewra +zaffran to elevate the texture as well as flavours.Qorma can be cooked with all varities of meat yet Mutton Qorma is usually preferred in Pakistani cusine. I also like to pronounce Qorma with Q(as qaaf in urdu)a sound coming deep from throat,as in our everyday language it is often sounds like korma, to mein it ruins the assence of this elegant traditional recipe.I have used a relatively simpler recipe today although recipe has long list of variations while travelling through time.enjoy

    Piyaz ko slice krlain.oil garamkr ky piyaz ko golden fry kar ky nikal lain.thanda kar ky hath sy ya hawan dasty main chora krain.grinder/chopper nahi use karna.

    1/2 cup water main lal mirch,dhania,salt mix kar ky rakh dain.iss sy masala phoolta hy

    Oil main sabit garam masala karkarain.ginger garlic paste aur masala add kar ky bhoonain so that masaly ka kachapan finish ho jye.phir gosht add kar ky bhoonain.jab colour change ho jye tu 2 cup pani add kar ky galny rakh dain.

    Dahi mein crush hoi fried piyaz mix krdain.gosht tender hojye tu dahi masaly mein add kar ky bhoon lain.

    Low-medium flame py gosht ko achi tarha bhonain.oil uper ajye tu garam masala+jaifal jawitri powder add krdain.5 min low flame py simmer krain then flame off krdain

    Quorma patla acha nahi lagta.quormy ki consistency bhuni bhuni achi lagti hy.agr app thora salan rakhna chahy tu pani add kar ky texture adjust krlain.hamary ghar mein bhuna masala pasand krty hain. Mazedar assan recipe ky sath quorma enjoy krain.
