Ingredients

12 servings
  1. 250 gbutter
  2. 400 gplain flour or (if using self raising flour, omit baking powder)
  3. 1 tspsalt
  4. 1 1/2 tspmustard powder
  5. 1/2 tspbaking powder
  6. 3egg yolk, + 1 to baste
  7. 120 ggrated cheese + 100g to sprinkle on top
  8. sour cream

    Rub butter and flour until resembles breadcrumbs, add rest of the ingredients and enough sour cream to get a soft but not sticky dough. Kneed until smooth and just comes away from the edge of the bowl.

    Turn the dough onto a lightly floured surface and roll it into a rectangle about 2.5cm high. Cut out with a fluted cutter (about 4-5cm wide) reshaping with the palm of your hands. Slightly Cris-cross the top of dough with a sharp knife.Cut out with a fluted cutter (about 4-5cm wide).

  3. 3

    Place them on a baking tray and brush with a beaten egg. Grate a little more cheese on top, and bake for about 12 minutes until golden. Allow to cool slightly on a rack. Enjoy.
