Boil the eggs & potatoes, now cut the potatoes into halves. Now peel them & give slits to the eggs on each side as shown in the image. Now heat a pan, add some oil, now add a 1/4th tsp turmeric powder & 1/4th tsp kashmiri red chilli powder & shallow fry the eggs & potato pieces for 2 to 3 mins..

Now in the same pan, add some more oil. Now add a tsp of jeera, khada garam masalas, bay leaf, dried red chilli, curry leaves a pinch of hing. Let everything splutter a bit.

Now add chopped onion, chopped tomatoes, chopped capsicum, ginger-garlic paste & slit green chillies. Mix everything well. Now add coriander-cumin powder, turmeric powder, garam masala powder, kashmiri red chilli powder, salt & sugar & give it a good mix. Cook the masalas on a low flame until oil releases from the masalas. Now add eggs & potatoes into it. Mix & coat them well with the masalas

Now add half cup of water to it. Cover it and let it cook om a low flame for about 5 to 7 mins. Garnish it with some coriander leaves & serve hot with chapati or rice...
