Mango coconut parfait

To the bowl, add coconut cream or first coconut milk.
If using coconut cream, add coconut water and dilute the mix, now add chia or sabja seeds.
Add the vanilla essence, desiccated coconut and sweetener of your choice, mix everything well and refrigerate overnight. After soaking the chia seeds would have absorbed all the moisture in the coconut milk and doubled. Now prepare the mango pulp by grinding the ripened mango fruit in a mixer. Start assembling the fruit and coconut mix in a glass one by one till you finish the end of glass and serve with any fruit of your choice or plain. This is a complete and filling breakfast recipe as you have added chia or sabja seeds in it. Try the recipe and enjoy with your family.

If you are using coconut cream, add coconut water and dilute the coconut milk. (if using coconut milk, avoid adding coconut water)

Add chia or sabja seeds to the coconut milk

Add vanilla essence

Add desiccated coconut and then Add the sweetener (honey, sugar or maple syrup) as per your choice

Mix everything well and refrigerate overnight. ( now chia or sabja seeds would have absorbed all the moisture in coconut milk and would have risen

Prepare mango pulp (in a mixi add fresh and ripened mangoes and make it as a paste)

Now assemble everything in a glass (first portion should be filled with mango pulp, second portion to be filled with coconut and chia mix) likewise assemble till you have enough mango and coconut mix.

Serve them as a breakfast by topping with any fruit or serve them plain
