Ingredients: 2 (15 oz) cans chickpeas, drained and rinsed; 1 C bell pepper, diced; 1 C red onion, diced; 1 C roma tomatoes, seeded and diced; 1 C smoked chorizo; 1 (15 oz) can sweet corn, drained; 2 C cilantro, loosely chopped; 1/2 C extra virgin olive oil; 1/4 C red wine vinegar; 2 tbsp lime juice; 1 tbsp chili powder; 1 tsp black pepper; 1 tsp salt

1 Cbell pepper, diced
1 Cred onion, diced
1 Croma tomatoes, seeded and diced
1 Csmoked chorizo
1 (15 oz)can sweet corn, drained
2 Ccilantro, loosely chopped
Dressing
1/2 Cextra virgin olive oil
1/4 Cred wine vinegar
2 tbsplime juice
1 tbspchili powder
1 tspblack pepper
1 tspsalt

In a large bowl, mix chickpeas, bell pepper, red onion, chorizo, and corn

In a small bowl, whisk together the dressing ingredients and mix into large bowl

Fold in the cilantro and chill for four hours. Toss before serving
