Ingredients

  • 2 (15 oz)can chickpeas, drained and rinsed
  • 1English cucumber, chopped
  • 1bell pepper, chopped
  • 1/2red onion, thinly sliced
  • 1/2 Cchopped kalamata olives
  • 1/2 Ccrumbled feta cheese
  • Kosher salt
  • Freshly ground black pepper
  • Lemon-Parsley Vinaigrette
  • 1/2 Cextra virgin olive oil
  • 1/4 Cwhite wine vinegar
  • 1 tbsplemon juice
  • 1 tbspchopped italian parsley
  • 1/4 tspred pepper flakes
  • Kosher salt
  • Ground black pepper

    In a large bowl, toss together chickpeas, cucumber, bell pepper, red onion, olives and feta. Season with salt and pepper

  2. 2

    In a small bowl, whisk olive oil, vinegar, lemon juice, parsley and red pepper. Season with salt and pepper

  3. 3

    Mix vinaigrette into large bowl and serve
