Topse or Mango Fish fry is a signature Bengali fish delicacy .It tastes best when it is either batter fried whole or slit open, deboned,marinated, coated with bread crumbs and fried.Both ways they are delicious.Here fish is marinated whole and then fried with a batter of gramflour,cornflour and rice flour alongwith spices which gives a crunchy outer crust while soft and spicy inside.

Ingredients

3 servings
  • 300 gmstopse or mango fish
  • For marination:
  • 1/2onion paste
  • 1 tspginger garlic paste
  • 2green chillies paste
  • 1 tbsplemon juice
  • 1 tbspcoriander paste
  • 1 tspShaan Fried Fish Masala
  • To taste salt
  • For batter :
  • 4 tbspgramflour
  • 2 tbspcornflour
  • 1 tbsprice flour
  • 1/2 tspgarlic paste
  • 1/4tsp kalonji
  • 1 pinchbaking soda
  • 1/4 tsp turmeric
  • 1/4tsp red chilli powder
  • To taste salt
  • 2green chillies chopped finely
  • 1 tbsphot oil
  • As neededoil for frying

Steps

    Remove the small scales and fins from the fish.Wash and pat dry.This fish is to be batter fried whole.Make a thick paste of half cubed onion,green chillies,chopped coriander and ginger garlic paste.Sprinkle lemon juice,Fried fish masala and salt in fish and smear well.Add the ground paste to the fish and coat on both sides Cover and marinate for minimum 1 hour.

    In a bowl add gramflour,cornflour and rice flour.Add baking soda, salt,turmeric,red chilli powder,kalonji,garlic paste and finely chopped green chillies.Add 1 tbsp hot oil and mix well.Add water to make a thick batter.Beat well to get a lump free smooth batter.Dip each fish alongwith marinade in the batter and coat well.

    Heat oil in a wok or pan and deep fry the batter coated fish in low flame so that fish is cooked inside.Fry well till crispy and golden brown.Serve topse batter fry alongwith steamed rice and dal in lunch or dinner or as an evening snack with a cup of hot tea or coffee or as an appetizer.
