Ingredients

  • 1and 1/2 cup basmati rice
  • 2 tbspdesi ghee
  • 1medium onion chopped thinly
  • 2green chillies, slit
  • 3/4 cupchopped carrot
  • 1/2 cupfrench beans chopped to 1 inch size
  • 1/3 cupgreen peas
  • 1/4 cupsweet corn kernels
  • 1 handfulsoaked soya chunks
  • 3 tbspfresh mint leaves, crushes
  • 5-6cashews made to halves and fried
  • Whole spice
  • 1and 1/2 tsp ginger garlic paste
  • 1bay leaf
  • 3 cupswater
  • Whole masala
  • 4green cardamom
  • 7-8black peppercorn
  • 4cloves
  • 1/2 tspcumin seeds
  • 2 inchcinnamon

Steps

    Wash the basmati rice 3 to 4 times and soak for 20 minutes. Drain the water and keep basmati rise dry.

    Chop the vegetables and arrange all ingredients.

    Add 2 tbsp ghee to pot. Add whole spices.

    When the spices begin to sizzle, add chopped onions and slit chilies.

    When the onion turns golden brown, add the ginger garlic paste.

    Saute well till the raw smell of ginger garlic disappears.

    Add mixed veggies, crushed mint, soaked soya chunks.

    Next saute everything well until the mint aroma comes. It takes 2-3 minutes.

    As I was cooking in a pot, I added 3 cups of water.

    Let it come to a rolling boil. I transferred to a big pot, added salt, drained rice and cashews.

    Stir well gently and cover the pot. Cook for 10 minutes on low flame. The rice grains turn fluffy.

    Gently mix with spatula and serve hot with raita.
