Baingan bharta is a spiced and mashed baingan dish popular in Inndia cusine. It is best enjoyed with roti paratha and rice.
Steps

Wash the baingan and cut it half till the stem and grease baingan with mustard oil.

Roast it until it becomes soft.

Peel the skin and remove the stem and keep it aside and mash it well.

Take a pan add mustard oil and heat it up.

Add cumin seeds fry it.

Add chopped onions, ginger, garlic, tomatoes stir it and cook until the raw smell goes away.

Add green chilli, peas, turmeric powder, red chilli powder, coriander powder and cook it for 3-4minutes on medium flame.

Then add mashed baingan, chopped cherry, dry fruits, salt and mix it well and cook it for2-3 minutes.

After 3 minutes add milk mix well and cook for 3-4minutes and add chopped coriander leaves.

Turn off the flame and serve it.
