Steps

Peel potatoes and place in a cold water

Cut them into small cubes

Place potatoes in a cooking pot with cold water and add 2 tsp of kosher Salt

Bring potatoes into a soft boil in high heat and simmer the potatoes until they are soft and fork tender

Drain potatoes and place potatoes back into the pot at medium heat and stir it for 2-3 minutes to release moisture

Use Sieve to mash the potatoes

Place mashed potatoes in a pot and Add melted butter
- 8
For extra flavour in a small pot medium-high heat: add 1 cup of heavy cream, 2 sprigs of rosemary, 1 head of garlic. Simmer and boil. Strain in sieve and add the cream into the potatoes.

Serve. Add ground black pepper and chives to top it off. Optional: add more butter
