Easy baked beans

I needed something quick and easy for dinner. My husband said he wanted a jacket potato. So, I decided to make my own baked beans. This is a one pot wonder and store cupboard staple. You can use any types of pulses that you’ve got the in cupboard. I used canelinni and chickpeas.

I needed something quick and easy for dinner. My husband said he wanted a jacket potato. So, I decided to make my own baked beans. This is a one pot wonder and store cupboard staple. You can use any types of pulses that you’ve got the in cupboard. I used canelinni and chickpeas.

Heat 1 tbsp oil over a medium heat in a saucepan (I used coconut oil because I like the taste) and fry the onion for approx 5 minutes until soft, but don’t brown. Then add the garlic and fry for another minute.

Add the smoked paprika and chilli flakes and fry for 30 seconds. Then add the tinned tomatoes, herbs, beans, sugar, honey and vinegar mix together.

Season with salt and pepper to taste, bring to the boil and then simmer on a low heat with the lid on for 15 minutes.

Mix in the basil leave (optional) and Serve with whatever you fancy. We had it with baked potatoes and salad.
