Steps

Keep the poha in sunlight for 2-3 hours. This gives a good crunch to poha. You can even roast it on slow flame in a big pan for 5-7mins

Remove the poha and keep aside for some time..

In a pan heat oil and one by one start frying ingredients in the following sequence and remove them on the roasted poha

Fry Peanuts till light brown. Then fry slices coconut. Then fry cashewnuts. Fry dahalya and remove all this on the roasted poha.

In the same oil start tempering. Add mustard let it crackle. Then add cumin seed fry it well. Add curry leaves, green chillies and fry till nice crispy. Add asafoetida and sesame seeds and fry well. Add turmeric powder, Cumin powder, red chilli powder, dry mango powder and fry for 1min and Remove from flame

On the roasted poha with fried nuts add salt to taste and sugar powder.

Now pour the tempering over the poha

With a broad spoon delicately mix all ingredients well and let get coated with spices well. Vigorous mixing will lead to breaking of poha.

Once you get even colour. Let it cool and its ready to eat.
