Delicious Homemade Atsuage

This is something that was sold at a shop that I used to work at many years ago It takes a while to make, so I only make it every once in a while.
It will take about 30-40 minutes to fry. It will be easy to fail with silken tofu, so I don't recommend it But, if you use firm tofu, even inexpensive tofu becomes delicious. Preparation: Cut the tofu into half for a regular size, but if you have a large block of tofu, cut it into thirds or fourths.

Wrap in a paper towel and heat in the microwave for about 1 minute. Put a weight on top and drain for 30 minutes to one hour. You can also wrap it in paper and drain in the refrigerator the night before.

Using enough oil to cover the tofu, heat the oil to 170°C. Add the drained tofu and fry. As it fries, the heat will decrease, so adjust it to stay in the 170-180°C range.

When they become lightly browned, flip them over. Up to this point, it should have been frying for about 20 minutes. Slowly fry the tofu While you're waiting for it to fry, make the other foods and prepare your garnish (chopped leeks).

Once it's crispy on the surface and a little hard, it's done. This should take about 30 minutes. If the temperature goes a bit over 180°C at the end, it's okay. Drain well, then transfer to a plate Drizzle soy sauce or mentsuyu on top if you like.
