A simple veggie omelette for 1 person

Ingredients

  1. 2large eggs
  2. 1 tspoil
  3. 1large shallot
  4. 3 handfulsspinach
  5. 1/4large carrot (spiralized) - optional
  6. 1/2medium carrot match sticks - optional
  7. Pepper (to taste)
  8. Salt (to taste)

Cooking Instructions

    Use a spiralizer to cut the carrots or cut them into match sticks

  2. 2

    Slice the shallow finely

  3. 3

    Heat the oil in a pan on medium high heat

  4. 4

    Stir fry the shallots until golden brown

  5. 5

    Put the carrots in and stir fry a min or two until cooked

  6. 6

    Put in the spinach and stir fry until wilted

  7. 7

    Spread the veggie mixture evenly around the pan

  8. 8

    Turn the heat down to medium low and pour the egg mixture into the pan and swirl the pan so that the bottom is covered. Season with salt and pepper.

    Wait for the bottom of the eggs to set. The middle set should be slightly wet.

  10. 10

    Fold the omelette in half. Cook the omelette until desired wellness.
