My favorite vati dal na khaman because my mother in law use to make very delicious. I love it.
Steps

Put water in chana dal and rice for 6 hours.

Take some yogurt and mix them.

Add all ingredients: ginger and chili paste, turmeric, salt, sugar, citric acid and leave over night.

Next day take small plate and gris with oil. Take one small bowl and take 3 big spoon batter and put 1/2 tsp eno 1spoon oil and water mix well.

Steam them for 10 min and when is done wait until cold and after cut them.

For tadka take 6 tbsp oil, mustard seed, hing, green chili and curry leaves.

Ready to eat, enjoy my recipe.
