Firstly blanch methi leaves in warm water by adding salt and sugar in water for around 2 mins.Drain it and keep it aside and let it cool down. After that chopped the methi leaves.

Then, in the water add sugar and salt.In it add peas.Cook it until soft and drain them too.

In a pan add 1 cup water in it add sliced onion, cashew nut and melon seeds.Bring one boil in it.Then strain it and then blend them in a blender into thick and fine smooth paste.

In a pan, add 4 tbsp of oil,in it add 1 tsp of cumin seed. After it splutter well then add bay leaves and saute it for 30 sec.Now in it add ginger -garlic paste and saute it for 2 mins in low flame

After that in it add, onion and cashew paste that was blend together.Mix them continuously and properly for around 4 mins until its colour changed slightly.

Now, in it add sugar,salt and garam masala. Stir them.Now add peas and cover it and cook it for about 2 mins

Then add blanched methi leaves.Stir it.Lastly in it add 1 cup fresh cream or malai.Mix them together Cook it for 1 mins.Turn off the flame.

Methi Matar Malai is ready to serve hot with naan, roti etc.
