Italian Egg Frittata

Egg Frittata is very famous in Spain, Italy, UK and every country particularly every region in these countries have different ways to make. It’s simple, easy to make and very filling. I made for my Sunday brunch. The Italian one has very simple filings like Parmesan cheese of course, onion, zucchini. I added chopped onions and lot of Parmesan cheese. Olive oil is needed in fair amount.

In a bowl break the eggs, add chopped onions, grated Parmesan cheese, black pepper powder, salt and mix. Don’t over beat.

In a pan heat olive oil. Pour the egg and with a fork spread the sides, tuck in the eggs so that it’s cooked well, keep the flame to low.

Keeping a plate on top, flip the frittata and cook the other side on low flame

Flip again and cook for 1 min on the side. Flip again and cook for 1 min again. Total four times you would need to flip to cook evenly. Set aside

Place on a board, cut wedges. Plate and enjoy
