Ingredients

4 servings
  • 3 TBSPOlive Oil
  • 1large onion diced
  • 1 cuppearled couscous
  • 4 clovesgarlic
  • 1 sprigfresh Rosemary
  • 4 cupslow sodium chicken broth
  • 6boneless skinless chicken thighs
  • 1 bunchspinach
  • Grated Parmesan

Steps

  1. 1

    Heat olive oil in Dutch oven on medium heat

  2. 2

    Add onion and couscous cook 8-10 minutes until browned

  3. 3

    Add rosemary and garlic stirring until fragrant

  4. 4

    Add chicken, chicken broth, salt and pepper

  5. 5

    Reduce heat and simmer until chicken is cooked 15-20 minutes

  6. 6

    Remove chicken and shred

  7. 7

    Add spinach

  8. 8

    Top with Parmesan and serve
