Ingredients

  1. 1roast Pork block
  2. 1 pieceGinger
  3. 1Japanese leek
  4. 150 mlSoy sauce
  5. 150 mlMirin
  6. 150 mlSake
  7. For preparation:
  8. 1 cloveGarlic
  9. 2 tbspSake
  10. 1 1/2 tbspSugar

Steps

  1. 1

    Tie the pork block with kitchen twine if it is not already tied up. Slice the ginger. Thickly slice the Japanese leeks, or slice diagonally. Grate the garlic.

    Lightly rub the meat with the sake for prep to remove the odor, and rub in the sugar. Then, rub in the garlic, and the prep work is done.

    Heat lard in a stain pot or Dutch oven, and cook the meat on both sides, add soy sauce, sake, mirin, Japanese leeks, and ginger into the pot, cover with a lid, and stew for 30 minutes.

    The meat was not fully submerged in the sauce, so I flipped it over several times.
