Spicy and Flavorful Chicken Chettinad is a delicious chicken curry from the Chettinad region of South India. It can be made dry or with gravy. It gets its flavor from the freshly ground spices (Chettinad Masala), coconut and shallots. While the Chettinad Masala gives it a hot and spicy flavor, the coconut adds a refreshing taste to it. The key ingredients is chicken which is high in protein. Try to use chicken with bones to make this curry as the bones add a lot of flavor.

South Indian Chicken Chettinad Recipe.
Spicy and Flavorful Chicken Chettinad is a delicious chicken curry from the Chettinad region of South India. It can be made dry or with gravy. It gets its flavor from the freshly ground spices (Chettinad Masala), coconut and shallots. While the Chettinad Masala gives it a hot and spicy flavor, the coconut adds a refreshing taste to it. Steps

Heat a pan. Add all the ingredients mentioned under "Roast and Grind". Roast on low flame for 3 minutes.

Add the desiccated coconut. You can also use freshly grated coconut. Roast till the coconut changes color.

Allow it to cool. Transfer to a blender and blend to a coarse powder.

Wash the chicken pieces. Drain and marinate with the ingredients mentioned under "Marination". Allow it to rest for 15 minutes or overnight.

Heat a pan. Add oil. Add curry leaves.

Add shallots and saute till the onions are translucent.

Add the chopped tomatoes and cook till the tomatoes are soft and mushy.

Add ginger garlic paste and saute till the raw smell leaves.

Add the marinated chicken and cook on medium to high flame for 2 minutes.

Now add the roasted and ground masala powder and salt. Saute for a minute or two.

Cover and cook on low flame for 5 minutes. Add water and cover and cook on a medium flame for 15 minutes.

South Indian Chettinad Chicken is ready.

Serve South Indian Chettinad Chicken hot with steamed rice, roti, parotta, etc.
