Firstly, boil toor dal with salt and turmeric powder in pressure cooker and adjust water consistency. Keep aside

Now chop all the veggies required in sambar -(suran, pumpkin, onions, drumsticks, eggplant, snake gourd, gawar phalli) and keep aside

Now heat oil in a kadhai and shallow fry all the chopped veggies except drumsticks
- 4
Now add tomato puree in boiled dal.

Now add tamarind Pulp, Sambar masala and red chili powder in boiled daal
- 6
Now add chopped drumsticks in the dal and add other fried veggies. Mix well
- 7
Adjust salt and water at this moment and take one whistle again in pressure cooker
- 8
Now for tadka- heat oil in a kadhai and add Mustard seeds, let it crackle then add asafoetida, curry leaves and dried red chillies along with a pinch of red chili powder. Mix well and add cooked sambar over this temporing.

Lastly add chopped coriander leaves and mix well.

Sambar is ready to be served with steamed rice / idli or dosa
