Peel and wash the potatoes. Cut them into French fry shapes. Rinse well to remove the starch.

Bring a large pot of water to a boil. Add 1 teaspoon salt. Add the cut potatoes and cook in the boiling water for 3 minutes. Make sure not to overcook the potatoes.

Drain the potatoes. Add all-purpose flour, rice flour, salt, black pepper, and cornstarch. Mix well. Add a little red food coloring if desired. Toast the sesame seeds in a dry pan for 1 minute without changing their color.

Fry the potatoes over high heat. Remove them halfway through frying. Then fry them a second time. This makes them extra crispy. Fry all the potatoes this way.

Heat 2 tablespoons oil in a pan. Add the onions and ginger-garlic paste. Add green onions, soy sauce, vinegar, and chili sauce, and mix. Add tomato ketchup and salt.

Add the fried potatoes and mix well. Add honey and the toasted sesame seeds, and mix again.

Garnish with chopped green onions and enjoy the tangy honey chilli potatoes.
