For preparing chilla batter, firstly mix all dry ingredients and add 1/2 cup of water to the besan chillla mixture.
whisk to combine all of the ingredients. Then, add more water as required and Continue whisking until the batter has a smooth, flowing consistency. - 2
For stuffing heat oil in a pan add all chopped vegetables. Keep the flame on low, stir fry till they become soft.
Now add grated paneer along with all spices and salt mix and stir fry for another 2-3 minutes on medium-high flame. Add coriander leaves mix well. Turn off flame and keep it aside. - 3
Now Heat a nonstick pan on medium-low heat, spread a bit of oil on it and ladle batter onto the center, much like making pancakes.
Next, gently use the back of the ladle to spread the batter. Make sure you are spreading the batter gently so that the chilla does not break. - 4
Then continue to cook the chilla on a low to medium-low heat until the top begins to look cooked or you start seeing some air-pockets.
you can drizzle oil (about ½ to 1 teaspoon) on the chilla at the edges and all around .
Then it’s time to flip your besan chilla and cook the other side.
continue cooking until you see golden spots on the both sides of besan chilla. - 5
Spread 2tbsp feeling on halves of chilla and fold it once, gently press from the corners. Similarly make all stuffed chillas.
