8 servings

6 cupwater
1 lbItalian Sausage
2 cupgreen lentil
3 cupcarrots, chopped
3 stalkcelery, chopped
1/2medium onion, chopped
3/4 cupgreen peas
1 cantomato sauce
1 cantomatos, diced
2 tbspbeef boulion
1 tbspbasil
1 tspsage
chopped parsley
2 pinchesthyme

Steps

60 mins

Sort and rinse lentils, then add them to the 6 cups water. Bring to boil.

Brown sausage over medium heat. Add drained meat to the lentils.

Add chopped veggies to soup.

Add seasonings and beef boulion.

Simmer soup for 1 - 2 hours over med/low heat; until veggies are tender.

This is delicious! I made it with chicken stock instead of beef, and used Italian turkey sausage.
