Broccoli in Sesame Vinegar Miso

My grandmother used to make this sesame vinegar miso, which goes well with vegetables. It was passed down from my grandmother to my mother, and then to me. In my opinion, it has a real homemade taste.
The vinegar miso is quite thick, and the flavour is strong. Dip into the veggies. Recipe by Snow*Love

Cooking Instructions
- 1
Separate the broccoli florets from the stems. Break the florets into small clusters, and cut the stems vertically.
- 2
Boil the stems for 1 minute in boiling water.
- 3
Add the florets and boil for 3 minutes. *The boiling time is just a guide, it will vary depending on the freshness of the broccoli.
- 4
Remove a floret and check to see how soft it is. If it's still hard, boil for a bit longer.
- 5
When the broccoli has reached your desired level of softness, drain in a sieve. I heard that broccoli loses nutrients when boiled in a lot of water, but I always do it this way.
- 6
If you are using a microwave, just do as you normally would up to this step.
- 7
Make the vinegar miso. First, mix together the ingredients marked ◆, then mix in the vinegar marked ◇. It's difficult to mix when runny, so add the vinegar last.
- 8
Finally, add the sesame seeds, and your sesame vinegar miso is done!
- 9
Serve it on a small plate, and enjoy!

Chikuwa, Snow Pea, and Sesame Vinegar Miso Mix Chikuwa, Snow Pea, and Sesame Vinegar Miso Mix
This is the sesame vinegar miso that my grandma always made. My grandma liked to eat this with lettuce and broccoli. I also eat it with various ingredients such as cucumbers, celery, chicken.-You won't be able to adjust the taste of the ingredients when you add the vinegar miso to the bowl, so add to the bowl with the chikuwa and snow peas instead, and adjust to suite your taste.-If the flavor becomes too strong, then add in ground sesame to adjust. Korean-Style Sesame Seasoned Burdock with Chili Pepper and Vinegar Miso Sauce Korean-Style Sesame Seasoned Burdock with Chili Pepper and Vinegar Miso Sauce
This chili pepper miso sauce with vinegar is a variation of the Korean "Chogochujang" sauce, which is often used for sashimi and seasoning for other dishes. I uploaded this recipe because when I combined the leftover sauce with some burdock, it came out really tasty. You can use the sauce with fresh or boiled vegetables, boiled meat (chicken or pork), or sashimi. It's really delicious and very convenient to make a lot so that you have it in stock. The main point is to thoroughly remove all of the water from the burdock after boiling. This recipe uses Korean brand powdered chili pepper, but if you can't get any, you can use ichimi chili pepper powder. But Japanese chili pepper is really spicy, so adjust it to taste. You can also adjust the amount of vinegar and sugar. Recipe by Heartful Kitchen Rei cookpad.japan -

Sesame Vinegar Teriyaki Salmon Sesame Vinegar Teriyaki Salmon
I used to prepare my fresh salmon in Western-style dishes. Whenever I prepared it Japanese-style, wrapped in aluminum foil, the taste just wasn't enough to become addictive. So, I added Chinese sweet and sour sauce. It goes so well with rice and is so filling. After adding the sauce, be careful not to burn it.Optionally, drizzle ra-yu for a slightly spicy kick.
