My grandmother used to make this sesame vinegar miso, which goes well with vegetables. It was passed down from my grandmother to my mother, and then to me. In my opinion, it has a real homemade taste.

The vinegar miso is quite thick, and the flavour is strong. Dip into the veggies. Recipe by Snow*Love

Ingredients

  1. 1 headBroccoli
  2. Vinegar miso
  3. 2 tbsp◆Red miso
  4. 2 tbsp◆Sugar
  5. 2 tsp◆Mirin
  6. 1 tsp◇Vinegar
  7. 1heaping tablespoon Ground sesame seeds

Cooking Instructions

  1. 1

Separate the broccoli florets from the stems. Break the florets into small clusters, and cut the stems vertically.

  2. 2

Boil the stems for 1 minute in boiling water.

  3. 3

Add the florets and boil for 3 minutes. *The boiling time is just a guide, it will vary depending on the freshness of the broccoli.

  4. 4

Remove a floret and check to see how soft it is. If it's still hard, boil for a bit longer.

  5. 5

When the broccoli has reached your desired level of softness, drain in a sieve. I heard that broccoli loses nutrients when boiled in a lot of water, but I always do it this way.

  6. 6

If you are using a microwave, just do as you normally would up to this step.

  7. 7

Make the vinegar miso. First, mix together the ingredients marked ◆, then mix in the vinegar marked ◇. It's difficult to mix when runny, so add the vinegar last.

  8. 8

Finally, add the sesame seeds, and your sesame vinegar miso is done!

  9. 9

Serve it on a small plate, and enjoy!
